How to tell real honey from sugar syrup

Adulterated honey is a real problem in Malaysia, and the Ministry of Health has repeatedly acted against products sold as pure honey that were substantially sugar syrup. So the worry is justified. The problem is that almost every test circulating in WhatsApp groups is useless.

What actually indicates genuine honey?

Five checks that are worth your time

  • A traceable seller. A registered business with a real address and a person who answers. Anonymous marketplace listings offer you no recourse at all.
  • Price that makes sense. Real honey costs what it costs. Honey priced far below the market has to be explained by something, and it usually is.
  • Proof, not just claims. A clear halal statement for handling, and any MOH or laboratory documentation the seller can actually show you rather than merely mention.
  • A full label. Named source or floral type, net weight, packer details, batch or expiry. Vague labels protect the seller, not you.
  • Natural behaviour in the jar. Raw honey crystallises, separates and darkens with time. Honey that stays perfectly clear and identical for years has usually been processed heavily — or is not honey.

How is a blended honey different from pure honey?

This trips up a lot of people. A blend like madu suami isteri is deliberately not pure honey — it is honey plus ground nuts, spices and roots. It should look darker, sit thicker, and separate over time. Judging it by the standards of a single-source honey is judging the wrong thing.

For a blend, the honest question is not "is this pure?" It is "are the ten things on the label actually in the jar, and in meaningful amounts?" Saffron is the tell: it is by far the most expensive ingredient in this category, and a cheap jar claiming saffron is claiming a trace.

What should you do if you think you bought fake honey?

Does the water test prove honey is real?

No. The water test measures thickness, not purity. Sugar syrup blended to the right density sinks in a lump exactly like honey, while genuine honey with higher moisture disperses. None of the popular home tests reliably detect modern adulteration.

Why does my honey turn solid and grainy?

That is crystallisation, and it is normal behaviour for real unprocessed honey. The rate depends on the honey's sugar composition and storage temperature. Stand the jar in warm water to loosen it, and do not microwave it.

How can I check if honey is genuine in Malaysia?

Buy from a traceable registered seller, be suspicious of prices far below the market, look for a clear halal statement and any laboratory documentation the seller can actually produce, and read the label for source, net weight, packer details and batch. At home, no test is conclusive.

Is blended honey fake honey?

No. A blend is honey plus named additions such as nuts, spices and roots, and it is supposed to be darker, thicker and to separate over time. It is a different product from single-source honey, not an adulterated one — provided the additions are genuinely named and present.

Where do I report suspected fake honey in Malaysia?

Contact the Food Safety and Quality Division (BKKM) of the Ministry of Health. Keep the jar, its packaging and batch number, and your proof of purchase, since a report cannot be followed up without them.

Should cheap honey be avoided?

Treat a price well below the market as a question that needs answering. Real honey has a floor cost set by how it is produced. That does not make every expensive honey genuine, but an unusually cheap one has to be explained somehow.
